Chocolate Chip Cookie Game Changers
No matter what recipe I use for chocolate chip cookies (🍪🍪🍪), I hereby commit to these techniques:
- Never use chocolate in the traditional shape of a mini Hershey's 💋. The bulk of each chocolate chip prevents the cookies from spreading evenly during the bake. Instead, chop the chocolate into fine pieces the size of loose gravel before adding to the dough.
- Make each 🍪 65 grams. This results in a 🍪 the size of a giant coaster. Any smaller and it is difficult to retain a soft, chewy middle.
- Remove the 🍪🍪🍪 from the oven when the edges are golden brown and the center is still pale.
- Once the 🍪🍪🍪 are out of the oven, immediately sprinkle flaky sea salt on top and squash them slightly with a flat-bottomed cup. Squash only to the point that the dome on top levels out, but don't crumble the crunchy perimeter.
